No-Bake Berry Cheesecake Cups Recipe

I was minding my own business in the library the other day, looking through a recipe book.

Suddenly, I stumbled across something that looked absolutely stunning: a no-bake cheesecake recipe. I took a picture of the recipe, then made it a couple of weeks later. It was phenomenal! It was so summery and delicious—I could hardly believe it had come from my own kitchen with such minimal work.

(There were 2 left on the 4th, so I loosely decorated them like American flags 🤪)

Although this recipe isn’t an original from me, I did make some minor modifications. It called for 2 tablespoons of butter, but after mixing it into the dry ingredients, I didn’t feel like it was enough to hold things together. So, I added about another tablespoon. It called for 2 tablespoons of honey as the sweetener, but we didn’t have any on hand. So, I used brown sugar instead. Additionally, I eyeballed the vanilla extract; I have no idea how much I actually added 😆

I love how simple the recipe is. It can so easily be modified into whatever you want it to be.

Not a cheesecake fan or want a lower fat content? You can turn it into a parfait so easily! Just do more greek yogurt and less cream cheese!

So without further ado, here is the no-bake berry cheesecake cups recipe!

*Prep time was about 20 minutes for me because I was on the phone at the same time and going slow as molasses 😂 If you’re going at a normal/fast pace, it should take about 5 or 10 minutes.

Ingredients

  • 3/4 cup crushed granola (homemade or storebought—it doesn’t matter!)
  • 1/3 cup crushed graham crackers
  • 2-3 tablespoons of melted butter
  • 1 8-ounce package of softened reduced fat cream cheese (reduced fat is actually pretty important, since if you used full fat, there would be about 20 grams of fat per serving from the cream cheese alone—not to mention the butter!)
  • 1 cup of plain greek yogurt
  • 2 tablespoons of brown sugar (honey or maple syrup are other sugar alternatives)
  • 2 teaspoons of vanilla extract
  • 12 strawberries
  • 1/3 cup of fresh or frozen blueberries

Steps

Combine the granola, graham crackers, and mixed butter. Then, portion it out into 4 small jars or bowls.

Mix the cream cheese, greek yogurt, vanilla extract, and brown sugar (or whatever sweetener you choose). You’ll probably have to microwave the cream cheese to get it soft enough to thoroughly mix in.

Spoon the creamy topping evenly over the graham cracker/granola crust.

Add a generous amount of strawberries and blueberries to the top of your cup cheesecake.

Dig in and enjoy it! (You may have to refridgerate it for a bit if it’s warm due to microwaving the cream cheese. It’s all about what temperature you prefer.)
